Cooking with Dad – Sirloin With Love

Recipe:
Sirloin Steak with Asparagus & Sweet Potatoes
Ingredients:
Sirloin steak (about two pounds)
1 tsp butter
1/4 cup olive oil
1 cup cubed sweet potatoes (no more than half an inch thick)
1 bunch of asparagus, trimmed and chopped into one-inch pieces
Peppercorn seasoning to taste
Garlic salt seasoning to taste
Directions:
Thoroughly rub the steak with peppercorn seasoning. Set aside in an airtight container in the refridgerator for 2 to 6 hours. (I let mine sit for 8 hours, because I love the way the peppercorn seasoning infuses the meat with flavor.)
When you are ready to prepare your meal, put the butter into a flat pan and let it melt over a medium to high heat. Preheat your oven to 350.
Rub olive oil evenly into the seasoned meat. Then place your steak on the heated flat pan, searing to a rich brown on each side. This should take no more than 2 to 3 minutes per side.
Transfer the browned meat to an oven-safe dish or pan and cook in preheated oven for an additional 10 to 15 minutes. (The length of cooking time in the oven depends on how you like your steak.)
Place a light amount of olive oil in a frying pan and heat over a medium-high burner. Add your sweet potato chunks to the pan and stir them gently with a wooden spoon while they cook.
When the sweet potato chunks are cooked halfway through, place your asparagus pieces in the pan with the sweet potato chunks. Drizzle with additional olive oil and add garlic salt seasoning to taste.
Continue stirring your sweet potato and asparagus mixture, which should be ready in no more than 5 to 10 minutes.
Be mindful to check your steak, turning if necessary. When it is done to your liking, remove it from the oven and let it rest while the sweet potatoes and asparagus finish cooking.
This meal should take no more than 30 to 45 minutes to prepare and cook.
