Cooking with Dad – Hopeful Shepherd’s Pie

On this episode of Cooking with Dad enjoy a visit and a great meal with Jason Wilson. Today’s recipe is shepherd’s pie. During the feature, Jason also talks about hope and how he is encouraged by Hebrews 11:1, which states: “Now faith is the assurance of things hoped for…” Jason also shares his own story of hope…and a delicious slice of this fantastic shepherd’s pie!

Shepherds Pie with venison bacon burgers, Dijon mustard and many great flavors

Ingredients:
1.5 lbs. of venison bacon burgers
4 small to medium size red potatoes (cut into small cubes)
3 garlic cloves (minced into smaller pieces)
2-3 stalks od Thyme (minced)
Large carrot (grated)
2 small onions (cut and minced into small pieces)
2 tablespoons of Dijon mustard
1 tablespoon of oil
3 pinches of salt
6oz of steamed mix vegetables  (corn, green beans, pinto beans, peas and carrots)
3/4 cup of milk
1 tablespoon of butter

Directions:
Fill your medium/large pasta pot one-third of the way with water, then place your cut potatoes in the water. Turn your stovetop heat to about medium-high to high. Add in 2 pinches of salt and 1 tablespoon of oil. Bring to a boil.

Next, take your cast iron pan, add 1 tablespoon of oil, turn your stove top heat for the pan to a medium, to medium high. Once the pan gets hot, add in your venison bacon burgers meat. Using either a mincer or a spatula spoon, mince and cook the meat until it’s a brown consistency. Add in your 1 pinch of salt, onions, carrots, thyme and garlic. Mix it all together. Drain grease as needed. (You don’t want to have a lot of grease as it will make the pie soupy.) Next, add in your Dijon mustard and mix in well.

Check on your potatoes to see how soft they are. Once they are soft, carefully drain water from the pot. Using a masher or spoon, mash all the potatoes until most smooth. Then, add in butter and mix with the potatoes. Finally, add in the milk and stir and mix until the potatoes have reached a creamy consistency.

Next take your steamed veggies and layer them on top of your meat in the cast iron pan. 

Then, layer the mashed potatoes on top of the mixed veggies and spread evenly.

Finally, put the pan with the shepherds pie in the oven for 15-20 mins. 

When taking the pan out, be sure to use a proper oven mitt when grabbing the hot iron skillet.

After all that fun work, enjoy this great meal with family and friends.
