It’s fall! Which means leaves are changing and time for fall foods! I’m talking pumpkin… sweet potato…. pears, cranberries, and apples!
The great thing about the bright yellow-orange varieties of squash, sweet potatoes, and pumpkin, is that they contain beta-carotene, which is a provitamin A carotenoid. Carotenoids act as antioxidants. These are substances that may prevent or delay some types of cell damage. You know what else is especially rich in antioxidants? Apples!
