by Home Page Staff - April 4-5, 2015

It’s time once again to take a look at what happened the past week. The Weekly Highlights are a great way to catch up, but don’t forget that you can always watch the full stories from either our front page or the archives section.
Heat milk and ½ cup of sugar to scalding (when little bubbles form on the sides of pan) stirring often. While that is heating, whisk the yolks, eggs, ½ cup sugar and corn starch together in a separate bowl. When the milk comes to scalding, take a cup of the warm milk and pour into the egg mixture and whisk and then pour back into the milk, whisking all the time. Continue to whisk the mixture as it thickens then cook for 1 minute. Remove from heat and add butter and whisk until melted, then add vanilla. Once incorporated add the coconut. Pour into a 13×9 baking dish and place plastic wrap directly on the filling and put into refrigerator to cool for at least 4 hours.
Whip the heavy cream, powdered sugar and vanilla to stiff peaks.
Assembly: Place cooled filling into a bowl and whip to make fluffy then put it into the pie crust, spreading evenly. Then spread the whipped cream on top of the filling. For the final touch, sprinkle the 2 tbsp of toasted coconut on top of the whipped cream. (Full instructions here.)
On Friday, March 27, Mrs. Carla Starkweather – a third grade teacher at Don Gill Elementary School – was awarded the Smart/Maher VFW National Citizenship Education Teacher Award for the State of Pennsylvania.

Mr. Steve Adams, Principal, opened the presentation by welcoming all in attendance. Teachers and students from grades second through fourth came to support Mrs. Starkweather.

Tom Brown, Jr. Vice State Commander and Americanism Chairman was invited to the podium to present the award. He was excited for Mrs. Starkweather and the school. Brown stated, “No one up here has ever won the award so it is really outstanding.” Mr. Brown presented Carla Starkweather with two plaques acknowledging her as the Smart/Maher, VFW teacher of the year for the entire state of Pennsylvania, for Kindergarten through 5th grade. Many offered congratulations to Carla such as Master Sergeant Clare Emery from our local VFW, Commander Dan Riepple from the VFW 15th District, and Superintendent Mr. Chris Morral.
Star Quarterback Michael Pietropola shocks Wellsboro this morning with his announcement that he is dropping out of the football program at IUP. Ed Weaver has all the details today on Home Page Sports.

He also ended this last season with 2,162 yards becoming the only quarterback in Wellsboro history to throw for over 2,000 yards in multiple seasons. His final career yardage stands at 6,150. “Michael is a great kid and great athlete, but a better person,” Coach Hildebrand said of his former quarterback. “He has a great work ethic and that’s what has gotten him to the point where he is today…”
