Penn Wells Culinary Class – Salad Dressings

Mix up a delicious poppy seed dressing and apple cider vinaigrette!

Executive Chef James Fry is back with another edition of the Penn Wells Culinary Class. Learn how to blend the perfect dressing to top off your summer greens and fall harvest vegetables. Today’s feature includes a poppy seed salad dressing and an apple cider vinaigrette.

Poppy Seed Dressing

Ingredients:

1/2 cup + 2 tsbp Vinegar
1 cup Sugar
1/2 tsp Salt
1/2 Onion (diced)
3/4 tsp Worcestershire Sauce
1 tsp Dry Mustard
1 1/2 tsp Paprika
2 tbsp Poppy Seeds
2 tbsp Sesame Seeds
1/2 cup Oil

Apple Cider Vinaigrette

Ingredients:

1/3 cup Cider Vinegar
1/3 cup firmly packed Light Brown Sugar
1 tsp Celery Seed
3/4 tsp Dry Mustard
1/4 Onion (diced)

Directions:

In a food processor, combine all the ingredients except the oil. Blend for 1 minute: continue blending while drizzling the oil into the mixture. Once the oil is incorporated, stop the food processor. Congratulations! You’ve created a delicious dressing to perfect your salad! The apple cider vinaigrette can also be used as a marinade for chicken.
