PENN WELLS CULINARY CLASS – PIE!
Heat milk and ½ cup of sugar to scalding (when little bubbles form on the sides of pan) stirring often. While that is heating, whisk the yolks, eggs, ½ cup sugar and corn starch together in a separate bowl. When the milk comes to scalding, take a cup of the warm milk and pour into the egg mixture and whisk and then pour back into the milk, whisking all the time. Continue to whisk the mixture as it thickens then cook for 1 minute. Remove from heat and add butter and whisk until melted, then add vanilla. Once incorporated add the coconut. Pour into a 13×9 baking dish and place plastic wrap directly on the filling and put into refrigerator to cool for at least 4 hours.
Whip the heavy cream, powdered sugar and vanilla to stiff peaks.
Assembly: Place cooled filling into a bowl and whip to make fluffy then put it into the pie crust, spreading evenly. Then spread the whipped cream on top of the filling. For the final touch, sprinkle the 2 tbsp of toasted coconut on top of the whipped cream. (Full instructions here.)
